Stop number four on the Ra-sai stamp rally! I trekked a little bit out of the way up to Toyonaka to once again meet up with Philoramen and try tori paitan shop Hoi. They advertised a thick and thin soup, both recommended, so I leaned as I always do for the thicker one.
The Bowl
The broth was a thick and syrupy chicken; rich without being too powerful, with a bit of a woody taste to it. The noodles were medium size and tasted almost like soba noodles. It was a flavor that stood out through the goopy soup.
The toppings were not to be outdone in Hoi's bowl, though. Hiding just below the surface was a slice of duck. Unusual for ramen, it was well seasoned with pepper and other spices. There was a ginger-filled meatball that tasted like a bite of Chinese xiao long bao. The chicken went the other route; simple and clean with a chew that let me forget the amount of salt and fat I was taking in.
Would I Go Again?
Yes, and I have since.
Should You Go?

Menya 7.5Hz+
I had just recently visited Menya 7.5Hz+, when I found I was due for another visit. Ramen Adventures blogger Brian was in town, and with just a couple of hours before his train left, we had to think fast to find an interesting shop. I was happy to introduce Brian to the Osakan specialty Takaida-kei ramen, and what better place than Menya 7.5Hz+? I had just tried the ramen again recently, so I went for their advertised Takaida tsukemen this time.
The Bowl
Wow, they really just took their soup and separated it from the noodles. These noodles were a bit thicker than the already thick noodles that they use for the ramen, which meant they were were fat and firm. They did not benefit from having lots of salt soaked in them as Takaida-kei ramen usually does, so it fell a little flat overall.
Would I Go Again?
Yes, but I would switch back to the ramen.
Should You Go?
Yes; get the ramen.

Muteppo Mushin
Outside of Osaka, there are a wealth of ramen shops I would like to visit. Some of them are nearby stations, but many of them are nigh impossible to get to without a car. Thankfully, though, I have a friend with one! A friend of mine who lives in Mie also likes ramen, and together we decided to explore the ramenscape of Nara.
The first stop was Mushin, the tsukemen-focused branch of legendary tonkotsu shop Muteppo. Muteppo's soup is some of the thickest I've ever tried, so I wondered what their tsukemen broth would be like. I ordered the tonkotsu tsukemen and prepared to find out.
The Bowl
True to its other branches, Mushin's soup was a bog of dirty tonkotsu, stinky and rich, and barely a liquid. The ultra-thick noodles were maybe the fattest I've ever seen, and even a large dose of them sat idly on top of the broth until it was forced in by my chopsticks. The slickness of the noodles worked well with the broth, and I actually preferred it to Muteppo's ramen variant. The juicy chashu stood out as well, and though I tried my best, I couldn't even finish all the noodles. It took half an hour of rest in the car before we could get moving again.

Menya Saisai
It was a slow Saturday and I needed dinner, but wasn't willing to go out of my way to a stamp rally location. A while back I had heard from a friend that Menya Saisai in Namba had switched their menu up, so I decided to give it a visit. In addition to the various shio bowls they still had from my first visit, they now had a couple of miso bowls and pork chicken ramen. The staff recommended the latter, so that's what I went with.
The Bowl
As you would expect from the name, this was a ramen with a very umami broth; meaty with pork and chicken, and with an overabundance of salt. The noodles swam in the bumpy soup; just the right size of noodles for a bowl of this consistency. The chashu, on the other hand, was much easier to down, and was surprisingly a good palate cleanser between slurps. Despite these bright spots, though, there was a bit too much salt to allow this ramen to achieve greatness.
Would I Go Again?
Maybe; I'm curious about the miso, but I don't know if I'll ever make it.
Should You Go?
This place is for those who want salt and meat. Others can skip it.

Fukuryu Ramen Wadachi
The stamp rally continues. For my third shop I decided to visit a shop I had already been to before: Fukuryu Ramen Wadachi. I had nothing but good things to say on my first visit, so I was excited to have another excuse to stop by. Instead of getting the standard ramen, I went for the wackier Maze-Nibo Junkie, an abura soba dish filled with sardine.
The Bowl
The noodle-y mixture was a bramble of thick and chewy noodles sopping with sardine flavors and salt, with a little bit of spice from the various fish powders mixed in. Even the chashu absorbed the sodium and sea; making the whole thing a bit too much for me to take. The rice in the end brought the flavor down to just about the right amount, but I still needed a few cups of water to take it down.
Would I Go Again?
Yes, though I would order something different.
Should You Go?
If you love sardines, try the maze soba. If not, their other dishes are excellent, so go check those out.

Kosanro
It was February, and time for my yearly trip to Nagasaki. That's not actually a thing I do, but since I went for the first time last February, maybe this is the beginning of a tradition.
And of course chanpon. Last time I stopped at a random chanpon shop because the ones I wanted to visit were busy, but this time we were able to make it. Kosanro, a restaurant in the heart of Nagasaki's Chinatown.
The Bowl
Just like my other experiences with chanpon, Kosanro's was a viscous stew of fish, held back just enough to be drinkable. The noodles wrapped around the myriad toppings and covered them all in the goop. There was squid, fishcakes, cabbage, sprouts, and my personal favorite, brown fish meatball that tasted like condensed gyoza meat dropped right in the middle.
Would I Go Again?
It was good, but I will keep trying new places if I visit Nagasaki again.
Should You Go?
Yeah, this was some high quality chanpon.

Chuka Soba Ibuki
The Rasai stamp rally has begun, and it's time to hit the ground running. Two days after visiting first shop Mugen, I visited chuka soba shop Ibuki in Tenma. They had a variety of shoyu broths, and I went with the recommended one with black iriko, a kind of Japanese sardine.
The Bowl
This was a really simple and light shoyu. Nearly transparent, the flavor was just of a light salt, with the subtle touch of sardine. The noodles were medium and flat; easy to drink up in the clear broth. The menma had a bit more punch; it was thick and woody, and the chashu, though light and chewy, matched the theme of the bowl.
Would I Go Again?
It was solid but not my favorite shoyu in the area; I'm not sure I'll have time to make it again.
Should You Go?
This is a good place for people who are into those fishy, light, shoyu bowls.
