Junk Story

The Rasai stamp rally kept going in full force. Pushing myself further along the way, I went to popular shio shop Junk Story. I'd been there before so I knew what I was getting into, but was more than happy for an excuse for a return trip. Also, since this was my first bingo on the stamp card, I got a free topping of rare chashu.

The Bowl
This was a bowl loaded with toppings. The broth itself was a light serviceable shio, and it was filled with flat, easy to slurp noodles. But all of the toppings held their weight and more. The chicken may have been the best - lightly yuzu pepper flavored, with a perfect amount of resistance that you only get from seared tataki. The rare chashu, extremely strange for someone who has grown up being told not to eat uncooked meat, was also packed with flavor, lacking the usual oil that chashu brings. Combine that with some strong menma and a creamy if structurally unsound egg, and I was pretty happy.

Zundoya

It was a rainy day in Kansai when I had my brother and a friend in town. Most of the interesting things in Kansai are better when outside, so the rain dampened our plans. But one sight that holds up pretty well in the rain is the recently reopened Himeji Castle.

I don't make trips this deep into Himeji this often, so we decided to get ramen. What better place than the flagship store of beloved tonkotsu shop Zundoya?

The Bowl
Some flagship shops are radically different from their branch shops, producing different or even better bowls than their franchises. Not Zundoya, but that's not a bad thing. Rich porky tonkotsu with thin, hard noodles that clump together. The pork broth I'm used to in its birthplace.

Would I Go Again?
I won't trek out to Himeji, but I'll go to their shops in Osaka.

Should You Go?
You should go to a shop, it doesn't need to be the Himeji one.

At time of writing, Zundoya has just made it to New York! Check it out!

Menya Taku

Menya Taku, how I love thee. One of the shops on the Ra-sai stamp rally was the new Taku in Ebisucho. I was only too happy to oblige.

The Bowl
A deep fish and chicken broth, with firm noodles, and a creamy egg. Just as I expected, and I'm not disappointed.

Would I Go Again?
I already have.

Should You Go?
Yes.

はい。

Kashiya

Onwards and upwards. There's no time to stop when I'm aiming to complete the Ra-sai stamp rally. Next on the list was Kashiya, a shop down by Tamade. I barely made it there by closing time in the early afternoon, but that still allowed me to make it inside and order their famous wafu tonkotsu.

The Bowl
This was such a smooth bowl of pork. True to its "wafu" name, it was full of Japanese-style fish-broth dashi, which rounded out the edges of the otherwise porky broth. It made me think it was a good idea to finish the soup the last drop. Let's not forget the rest of the bowl too - curly, knotty noodles that looked like they were hand-pulled, and a couple big slices of melty pork. Now I have a reason to make another visit to Tamade.

Sanku

I met up with Philoramen on a Tuesday night, hoping to continue our stamp rally journey. When we arrived at Komi, though, this is what we found.

It was closed. Luckily they were kind enough to leave stamps out for us.

We were not to be deterred and were hungry for ramen, though. We decided to hop on the train and try old Fukushima favorite Sanku. I had tried the ramen on my first time, so I decided to opt for the whole wheat tsukemen this time.

The appetizer, potato with a sweet glaze

The Bowl
I continue to be impressed by this stellar top-tier shop. The broth had a subtle fish flavor covering the chicken tonkotsu. The whole wheat noodles are a bit unusual, but the graininess added texture to each bite. They were long and chewy, almost like udon, which is how I like it. The chashu was pretty fatty, and more flavorful for it. In the end they gave me some rice to add to the soup, which let me soak up the last drips, if it didn't fill me to the brim.

Would I Go Again?
Yes.

Bakabo

Just a few months after Baka Yaro opened in Nakazakicho, it was time for the owner to open a second shop just around the corner. Unlike the sludgy tonkotsu Baka Yaro produced, though, Bakabo focuses on chicken shoyu ramen. I stopped in for lunch to grab a bowl.

The Bowl
The broth was a sharp but solid shoyu, filled with bunches of square, firm noodles. Interestingly, there was a smattering of different meats topping the otherwise simple bowl. The chashu was an expected dose of pork, but the slice of chicken, and the understated slab of terrine shined as they mixed with the robust soy sauce flavor.

Would I Go Again?
Yes.

Ramen Sengoku Day 2

I wasn't initially planning on going to Ramen Sengoku twice, but when there are ten shops showing off their specialties, who am I to say no? The day previous I went by myself, but today I took a stop by with Philoramen.

First up today was Zundoya. I've always been a fan of Zundoya's dedication to Hakata-style tonkotsu, but I'm happy to see they tried something different for this event. They presented the soy milk tantanmen RED.

The Bowl
This was a bowl full of bright red, sesame-doused, oily soup. It was spicy with a nice covering of spring onions, and every bite of curly noodles came with a bagel's worth of sesame seeds. It was good on a cold day, and I would order it if they had it at their main shop.

Next on the docket was Mutahiro, a Tokyo ramen shop that just made its debut in Fukushima in Osaka. At time of writing I have only just barely visited the Osaka branch. At Ramen Sengoku their specialty was Tanmen, a vegetable-laden shio style.

The Bowl
After the heavy tantanmen, it was nice to have a simple bowl. It was a light shio, with a pound of vegetables in it. It was like eating a peppery vegetable stir fry cooked in a light broth. Add to that thick curly noodles from Tokyo star Nagi, and a piece of roasted chicken and you have the right way to cap off a ramen event.

Ichifuku

Even though I had eaten ramen for lunch, at night I found myself with a group of friends looking for a late night ramen fix. That's every excuse for me to try a new shop, so I led our group to late night tonkotsu shop Ichifuku in Namba.

The Bowl
Ichifuku offered an oily by-the-numbers bowl of pork bone broth. It was thin and fatty, and the noodles were thin and hard, as you'd expect. The chashu was alright, and the whole place screamed "acceptable". It was the right amount of grease to eat after drinking, but there are better places to stop during the day.

Would I Go Again?
Nah, there's plenty better tonkotsu shops in Namba.

Should You Go?
Nah.
