Shofuku

I'm not always in the mood for Jiro-style ramen, but this time I tried Shofuku, a shop in Awaza for their pork ramen.

The Bowl
It was a solid shoyu base, and to be honest, I was glad that it was one of the mildest Jiro-style bowls I've had. The noodles, were, thick, square and wheaty, and the bonito flakes too helped to mellow out the bowl. The chashu wasn't necessarily brimming with flavor, but it was juicy and fatty in a way that kept me warm on a cold winter day.

Honoru

Halal food has gotten bigger here, so Osaka was bound to see its first, as far as I know, halal ramen shop. Honoru is from Tokyo, but I visited the Namba shop for a bowl of their spicy chicken ramen.

The Bowl
A thick chicken potage, covered in smokey ra-yu chili oil. There were chili peppers hiding inside, along with some chewy chicken chashu. The noodles were thin, bouncy, and yellow, and bit by bit brought up some of the smokey spice with them.

Ramen Expo 2016

Another year, another Ramen Expo! Don't check which year this is or you'll realize how far behind I am writing these.

First up was a collaboration shop, presenting their take on Nagoya's Taiwan Ramen.

The Bowl
A pickly, light bowl of clear soup, with simple strands of noodles that almost had the substance of clear rice noodles. The bowl was filled with solid chunks of minchi, chives, and the whole thing was just a bit spicy.

Next up was Menya Jiro, with tonkotsu ramen from Kagoshima.

The Bowl
It was a rich tonkotsu, but without the stinkiness, mellowed by shoyu. The noodles were short and medium-thick, but brought with them the perfect amount of flavorful broth with each bite. There were a couple different slices of chashu, but the thicker one stood out as tender and charred in a way that tastes like good American barbecue pork.

Until next year, Ramen Expo.

Noko Tori Paitan Ramen Misora

I went ramen hunting with a friend in Kyoto, and we ended up at Misora, a shop I didn't realize at first was related to nearby shop Mitsuru. Knowing that, I decided to instead of ramen, order their Noko Tori Tsukemen Black.

The Bowl
The broth was a strong and salty shoyu, with a heavy background flavor of chicken. The noodles were one of my favorite styles - round and smooth, ultra slurpable. The chashu was nice and tender, tasting strongly of ginger.
