Mazeru

Just out getting drinks with a friend, but where better than a Taiwan maze soba shop? I got a drink at Mazeru and ordered the standard Taiwan Maze Soba.

友達と飲みに行くには、台湾まぜそば屋さんでいいですよね?まぜるで何か飲んで、定番の台湾まぜそばを注文しました。

The Bowl
Just what I wanted: not too strong, but with a bit of spice and glazed noodles. Good to eat when sober, and good drunk too!

その気分でぴったりでした。濃すぎなく、ピリ辛でつるっとした卵がかかった麺。素面でも、酔っぱらってもおすすめ!

Tenkatoitsu Ramen Battle - Day 5

More and more bowls at the Tenkatoitsu Ramen Battle. first up was a rich chicken shoyu with barbecue pork from Junk Story.

また天下統一ラーメンバトル!まずはJunk Storyの濃厚醤油炙りチャーシュー鶏そばでした。

The Bowl
As opposed to Junk Story's usual clear-as-day shio, this was a heavy chicken gravy. The medium-sized noodles glopped on to each other using the molasses-like soup as glue. As advertised in the dish name, the charred slices of pork managed to cut through the broth's weight.

Junk Storyの普通の透き通った塩と違って、どろどろとしたグレービーソース的な鶏スープでした。黄色い麺ははスープのノリでいっぱい絡んできました。メニュー名通り炙りチャーシューの味がうまくて、スープの味を超えられました。


Next up was a simpler bowl: Taiwan maze soba from Kokoro.

次はもっとあっさりとしたものでした。麺屋こころの台湾まぜそばでした。

The Bowl
This was maybe the spiciest bowl I had at the battle so far. It wasn't super hot, but had a nice kick. The noodles stuck to the bits of onions and seaweed, thanks to the sticky sheen applied from the raw egg. This wasn't my favorite bowl of Taiwan maze soba, but a good one for the festival.

バトルでの一番辛かったかな。激辛までもなかったですけど、ちょうどいいピリ辛のスパイスが効いていました。生卵のつるで海苔、ネギがよく麺にくっつけました。祭でのいい麺でした。

Daiki Men

Another day, another Taiwan maze soba shop. This time in the restaurant floor in a random building in Umeda Daiki Men popped up, and so I stopped in.

最近台湾まぜそば屋さんが多いですね。今回梅田のどっかのビルのレストラン階で「ダイキ麺」が出てきました。

The Bowl
A nice minor twist on the standard formula, the noodles here were flat and chewy, and the whole bowl had aromas of anchovy. This had a bit more kick than similar bowls, thanks to the amount of red pepper powder placed on top. In the end, the vinegar on the side was a good finisher, helping to sweeten the bowl and cut the spice.

普通の台湾まぜそばと違って、麺が平打ちで、煮干しの香りがすごかったです。一味がいっぱい載っていて、スパイスが効いていました。最後の方にお酢を入れて、甘味と辛味がいいバランスになりました。

Would I Go Again?
This was a solid bowl, but I will find it hard to make time to visit again.

おいしかったですけど、また行く機会がなさそうです。

Should You Go?
It's pretty good, but there are plenty of other high caliber Taiwan maze soba places to try.

うまかったですけど、他のお薦めしている台湾まぜそばやさんもいっぱいあります。

Menya Hanabi

This has been a month of traveling. This time I got a chance to visit Nagoya.

最近いろいろ旅行しています。今回名古屋に行きました。

And of course a trip to a ramen shop. Taiwan maze soba has been big recently, so now I had a chance to go to Hanabi, the founder of the style.

で、ラーメン。台湾まぜそばは最近流行っていて、「麺屋はなび」という発祥店に行けました。

The Bowl
The original Taiwan maze soba offered thick noodles, glazed with the yolk of an egg, with just a tiny kick and the background taste of nori.  It was chock full of garlic, and even the fatty chunks of pork bathed in the garlic oil. It was decadent, and I'm glad I took a long walk afterwards.

発祥の台湾まぜそばの麺は卵の黄身でつるっとしました。ピリ辛で、のりの味がどこでもしました。ニンニクだらけで、分厚いポークもニンニクの油に煮込んでいました。非常に重くて、食べてから消化散歩しました。

Menya Yamahide

Taiwan maze soba shops are everywhere. After showing up in Kitashinchi, Shin Osaka, and Shinsaibashi, they have finally inched even deeper into Minami, showing up right by JR Namba. Yamahide is a chain, and as far as I can tell this is their first Osaka shop. This branch was extremely small, with only five seats and that wonderful feeling like you're always being watched by the manager.

台湾まぜそば屋さんはどこにでもできてきました。北新地、新大阪、心斎橋でできて、やっとミナミの深い方に来て、JR難波で「麺屋やまひで」ができました。チェーン店での大阪一号店みたいです。店が非常に狭くて、5席しかなくて、ずっと店長に見られていました。

The Bowl
This was a cookie cutter bowl of Taiwan maze soba, which means it was pretty good. The noodles were thick and coated in a nice eggy glaze. Every bite came with a scoop of nori and garlic, with a bit of spice from the chives. It was quite salty, but as per normal, a few doses of vinegar evened things out.

結構スタンダード的な台湾まぜそばでした。要するに、美味しかったです。麺は生玉子で極太い麺がつるっとした食感でした。全体的に海苔とニンニクの風味が強くて、ニラでの辛さも聞いていました。塩辛かったですけど、いつも通り酢をかけたら食べやすくなりました。

Would I Go Again?
There are so many options I'll have a hard time making it back here.

選択肢が多すぎてまた行かないかもしれません。

Should You Go?
I would recommend it if you're looking for a quick bite by JR Namba.

JR難波の近くの何か早いもの食べたい場合はいいと思います。

Ramen Mazesoba Arashi

These Taiwan mazesoba places are popping up everywhere! It was only a matter of time before one appeared in Shinsaibashi, and Ramen Mazesoba Arashi gets to claim the trophy of being first. As per standard, it has a straightforward menu with one main dish: the Taiwan maze soba.

台湾まぜそばやさんがどんどん増えてきました。やっと、心斎橋ら辺に一軒が出てきました。「らーめん まぜそば あらし」が最初でた店です。台湾まぜそば屋さんらしく、名物は「台湾まぜそば」です。

The Bowl
These bowls are starting to fall into a pattern. The noodles were nice and thick, with a tiny spice kick and rich konbu flavor. It wasn't bad, but it was salty and a little simple compared to the others I've had.

台湾まぜそばはけっこう決まっているフォーマットですね。麺が太くて美味しかったです。ピリ辛で、昆布の風味が広がりました。美味しくて、他の店よりさっぱりとした感じがしました。

Would I Go Again?
It would be a good stop late night, but there's enough of these shops I think I'll try a different one.

〆として結構いい気がします。

Should You Go?
You should definitely try this style; this wouldn't be my go to, but it's decent and is in a good location.

台湾まぜそばを一回食べて欲しいです。この店は場所的に便利です。

Tsubaki

Taiwan Maze Soba shops have been popping up all around Osaka. The style introduced in Nagoya has finally made its way to Kansai. Tsubaki has brought it to Kitashinchi, though at time of writing they have moved to Nipponbashi. As with specialized shops like this, I ordered the one main menu item, the Taiwan maze soba.

大阪に台湾まぜそば屋さんが最近増えています。名古屋からの麺がようやく大阪にブームになりました。「椿」という店が北新地でできましたけど、日本橋に移転しました。つばきみたいな特化している店に一つのメニューしかないので、それを頼みました。

The Bowl
The egg on top of the mixture bonded with the already substantial curly noodles to form thick, chewy, glazes ropes. There was actual spice in the bowl, and the garlic gave the bowl bite, too. It was a bit salty, which made it a bit tougher to eat as it went on, but Tsubaki provided a kelp vinegar that balanced out the salt and sweetened up the meal.

上に乗っていた玉子が麺と混ざって、艶のある極太縮れ麺になりました。麺もちゃんと辛くて、ニンニクと混ぜたら、パンチがありました。食べながらちょっと塩っぱい感じがしましたけど、自家製昆布酢をかけたら、甘味がして、味が変わってきました。

Would I Go Again?
Yes.

You should definitely try one of these Taiwan maze soba shops, and Tsubaki is a good one.

台湾まぜそばを絶対一回食べるべきです。つばきをおすすめします。

Marusho

Taiwan maze soba is in. Abura soba has always been a variety of ramen that has been missing from Osaka, but not any longer. At the time of writing, I've been to several shops in Osaka specializing it, and I'm sure more will open before I even post this.

What is Taiwan maze soba? It's a form of abura soba that has ground meat, shredded seaweed, onions, and chives, all with a raw egg sitting on top. There's some spice usually mixed in to make it have a wee bit of a kick. Marusho opened in Esaka in 2014, but several months later they opened a second branch in Shin Osaka, making it just that much easier for me to visit.

台湾まぜそばははやっていますね。大阪には油そばの店がいつも少ないです。でも、最近台湾まぜそば専門店が転々できてきています。

台湾まぜそばとは何でしょうか?ミンチ、海苔、タマネギ、ニラなど乗っている油そばです。一番上に生玉子が乗っています。あと、いろんなスパイスが混ざっているので、ピリ辛のが多いです。マルショウは2014年に江坂で開店しましたけど、何ヶ月後新大阪で二号店ができました。ほんで、行きやすくなりました。

The Bowl
Time for the verdict. This was my first bowl of Taiwan maze soba, and it set the scene well. The noodles were thick and slightly fat. They had a glean to them given by the raw egg, and it helped them capture stray chives and seaweed as they rotated around the bowl. It had a good spice and was a bit salty overall. Luckily they provided vinegar on the side that cut the saltiness and mellowed the bowl out for its last few bites. With the remaining sauces and toppings, I was given ato meshi, a bit of extra rice that is becoming more common to soak up the last juicy bits.

結局どうだったでしょうか?私の初めての台湾まぜそばで、うまかったです。麺が太くてちょっと平打ちでした。生玉子でちょっと輝いて、散らしているニラと海苔を絡んでいました。全体的にピリ辛でちょっと塩っぱかったですけど、用意してくれたお酢を入れたら、柔らかくなりました。残っているタレにあとめしを入れて、最後のトッピングまで食べれました

Would I Go Again?
Yeah, this was a good Taiwan maze soba, and I would happily bring someone to introduce them to the style.

かなりうまいまぜそばだったので、友達を連れて行きたいです。
