Shofuku

I'm not always in the mood for Jiro-style ramen, but this time I tried Shofuku, a shop in Awaza for their pork ramen.

The Bowl
It was a solid shoyu base, and to be honest, I was glad that it was one of the mildest Jiro-style bowls I've had. The noodles, were, thick, square and wheaty, and the bonito flakes too helped to mellow out the bowl. The chashu wasn't necessarily brimming with flavor, but it was juicy and fatty in a way that kept me warm on a cold winter day.

Rekishi wo Kizame

I'm not in the mood for Jiro-kei ramen every day, but every once in a while I enjoy giving it a try. This time I stopped at maybe Osaka's most famous Jiro-kei shop, the Teradamachi branch of Rekishi wo Kizame. It was a greasy, messy place, filled with young men and the smell of garlic and oil. I ordered the aptly named "ramen".

The Bowl
The broth was a sharp, garlicky shoyu, captured at its best by the chunky, curly, glutinous noodles. The chashu was enormous too, but didn't quite capture the essence of the bowl the same way the noodles did. I was destroyed by the oil and raw amount of food, but I don't regret it.

Would I Go Again?

Kibunya

Most nights when I head to ramen shops, I visit a shop I've deliberately looked up and am interested in. Nights like this one, though, have me visiting some random shop early in the morning after a night of drinking. Wakayama-style ramen shop Kibunya was the shop I stumbled into, just hungry enough to eat their choi-men small size ramen.

The Bowl
This was what I expected, and kind of what I needed at that time. Generic tonkotsu shoyu; oily, with mediocre noodles. It was eminently edible, and what else could I ask for?

Would I Go Again?
Maybe if I need to recover at the end of a long night.

Should You Go?
This is not a must-hit shop.

Goruya

As part of my trip to Tokyo, I made a stop in Yokohama. And what would a stop in Yokohama be without a meal at a Yokohama-style Iekei ramen restaurant? It was late and I wanted to get some sleep so I picked a shop near where I was staying: Goruya. As is standard at an Iekei place, I got the shoyu tonkotsu.

The Bowl
It had been a while since I had the oily Yokohama-style ramen, and it was about as I remembered: oily and powerful, strong-tasting but also coma-inducing. The noodles were thick and firm, and the salt-doused nori and spinach were pretty good. The chashu on its own was representative of the bowl as whole: standard and solid.

Would I Go Again?
Next time I'm in Yokohama I'll try a new place.

Should You Go?
It's a solid joint if it's right around where you are.

Menya Kuroko

Tenroku is home to a large number of restaurants, ramen shops and non-ramen shops alike. Menya Kuroko is a shop just north of the main arcade, specializing in tonkotsu shoyu, a blend not found too often in Osaka. Their main dish is the Kuroko Ramen, a tonkotsu shoyu with garlicky ma-yu.

The Bowl
As they delivered the bowl to me, I could smell the charred soy sauce and garlic coming. The broth was a bit salty, but the ma-yu was mixed in well, making it feel like a vital component to the soup's charred edges, as opposed to a topping as it often seems like. The noodles were thicker than you'd expect, but as in Takaida-kei ramen, they did their job sucking in the sodium around them. There was a single wide slice of pork that tasted like a sweet piece of bacon.

Would I Go Again?
It was pretty solid, but I have so many other places to visit in Tenroku I'm not sure I'll make it back.

Should You Go?
I recommend this place for anyone who loves that charred garlic flavor.

Kusumotoya

June is prime time for Japanese plums, which means it's a prime time for umeshu. A friend of mine and I visited Wakayama for an umeshu festival, and given how cheap it was and how many varieties there are, we hit it pretty hard. The only way to end a sweet day bender like that is with a bowl of Wakayama ramen. It had been a while since I tried the Wakayama variety, so I was happy to swing by shop Kusumotoya, not too far from the station for their tonkotsu shoyu.

The Bowl
A strong tonkotsu, porky but full of salt, too, this ramen had just the right viscosity to balance out my drunken stupor. Overall the bowl was simple: thin noodles, and thin chashu, both with a slight amount of chew. Good for what it was.

Would I Go Again?
It was good but it's far. I'll try a different Wakayama ramen shop.

Should You Go?
It's good if you happen to be in Kainan city.

Menya Murata

It was a lazy Saturday and I decided to walk to famous shio shop in Imazato Kibariya. As has happened all too many times before, though, it was mysteriously closed, and I was forced come up with a new plan. I randomly had come across new shop Menya Murata, so without knowing anything about it, I went in and ordered their standard rich tonkotsu shoyu ramen.

The Bowl
The broth was rich and porky; not quite stomach-killing as a lot of tonkotsu shoyu tends to be, but instead very thick, like a sauce marinating the soba-like firm noodles. It was contrasted by the thin if fatty chashu and light egg. It was a solid bowl, but not an all-time great.

Would I Go Again?
I don't think I'll head back.

Should You Go?
If you're all about tonkotsu shoyu it's worth a stop, otherwise you can skip it.

Osaka Bakufu

I am always on a quest to find new and inventive ramen shops, but sometimes I need to stop and visit the shops that are right in front of my nose. Osaka Bakufu has been around as long as I've been in Osaka, and with it's central location in Shinsaibashi, it's a wonder I hadn't been there before. At any rate, I was meeting some friends in Shinsaibashi, and I so I decided that it would be the night I would try Bakufu. I chose the recommended black tonkotsu shoyu.

The Bowl
The broth was smooth and milky; it had been a long time since I tasted this kind of a tonkotsu broth. The creamy soup was dotted with speckles of ma-yu, a black garlicky oil, so the flavor was a mix of rich tonkotsu and garlic. The medium noodles were coated in the slippery oil, making them easy to slurp, and the flavor carried on to the one big slice of chashu. It wasn't the best tonkotsu I've had, but it was solid enough, and the friends I went to meet regretted me having filled my mouth with garlic.

Would I Go Again?
It was solid but nothing special, so I won't be back.

Should You Go?
For ma-yu lovers it might be good, otherwise there are better places in the area.

Nara My Home Festa

One Saturday morning, I got a message from a friend. He was in Nara and wanted to join him. I had plans later in the day, so I didn't think I'd be able to make it. But then he let me know that happening at that moment was the Nara My Home Festa, a mostly boring event that happened to have eight different ramen shops presenting bowls to the public. I got out of bed and headed over there.

I arrived and took in the calm atmosphere. There were eight shops, but I only had the stomach to try a couple of them. I decided first to go with Nara's own Menya Kukan, and their tonkotsu shoyu bowl.

The Bowl
I always prefer to start out these ramen crawls with a rich bowl. Menya Kukan lived up to that with an oily, garlickly bowl. That was about the best part of it, though, as it was a bit overly salty, the noodles were rubbery, and the chashu was bland.

But that's why I eat multiple bowls. Next I decided to go for a much lighter bowl - a light shio from Amano Jack.

The Bowl
This was a welcome break from the rich garlic of the previous bowl. Amano Jack's broth was salty, but was cut into by a refreshing lemon accent. The noodles were light and easy to drink, and the chashu had the strong and delicious flavors of having been marinated in soy sauce for a long time.
